The Wedding Cake Election

Some weekends ago we went down to Gothenburg. The plan was to meet our parents and talk about the wedding. Another important task was to choose the flavour of the wedding cake. We had earlier decided to order the wedding cake from Steinbrenner-Nyberg who makes incredible cakes, but we didn’t know which flavour to choose. So we called Steinbrenner and ordered a bunch of pastries which are mini variants of their cakes. On Saturday AM we had a cake election together with our parents, toastmaster and my brother and his wife at Fredrik’s parents appartment.

For the wedding cake the bakery offers 4 different flavours, so for our small cake election we had ordered a bunch of pastries with their following 4 flavours:

BJÖRNBÄR I PANNACOTTA (Blackberries in pannacotta)
A delicous almond bottom, blackberry mousse and italian vanilla pannacotta.

PASSIONSFRUKT (Passion fruit)

Sponge cake bottom, banana curd and passion fruit mousse.

STRAWBERRY CHEESECAKE
Cheesecake made of white chocolate, strawberry curd and blanc mange made of strawberries. Sponge cake bottom

TRIPLE CHOCK
Brownie bottom, milk chocolate mousse and white chocolate mousse.

It was fun to taste the different pastries and we hade deep discussions about which were the best. The two most popular ones were the blackberry and the chocolate cake, so we decided to skip a traditional wedding cake and thought that we could arrange those two kind of pastries on a cake stand and then have a larger cake on top for cutting. But when we tried to order this variant at the bakery they were not quite happy, so at the end we decided to go with a traditional wedding cake with the blackberries in pannacotta flavour. The cake will be covered in white chocolate sheets and I hope that it will look nice.

When we were finished with the cake tasting we got a big surprise. My girlfriends rushed in to the appartment with champagne bottles and I realized that this was the start of my hen party. In Sweden the bride to be (and also the bridegroom to be) are “kidnapped” by their friends and then they spend the whole day with different activites and missions. Anyway, I was really surprised and very touched. Then I realized that Fredrik’s friends were there as well. We went out on the balcony and drank champagne. After some drinking the girls put a veil and a paper crown on my head and then both boys and girls went to Slottskogen which is a large park just a few minutes from Fredrik’s parents. There I had to do a minature model of Fredrik in clay and he had to do a model of me as well. Then the boys left us as they had other plans, later they told me that they went climbing, played paintball and then barbecued. Myself I stayed in the park with my girlfriends. I got some small typical hen party missions which were rather funny. Then we had some pasta salad which the girls had prepared. We also had different cheeses and then we had wine tasting. The weather was absolutely wonderful and we had a great time in the park. After a few hours we went to a spa where we bathed in a jacuzzi and had some more wine. Then we went home to one of the girls were we ended the evening with home made tacos (by mere accident Anne actually wrote about tacos and Swedes yesterday). The girls had also prepared questions about me, them selves and our relationship. I had a wonderful and very long day and the next day I didn’t feel too well but it was absolutely worth it :-)

Sorry for not posting anything lately, our wedding plans are taking a lot of time. After Fredrik’s proposal we decided to get married already in August, so we have a lot to plan during this short time. The most important things are already booked: the church, the restaurant where we’ll have the wedding dinner for our 50-60 guests and my wedding gown (even if there is a small risk that I won’t get it delivered in time. And no, I won’t tell anyone about it except that it’s gorgeous :-) We’ve also booked our honeymoon to fascinating and beautiful Japan, finally we’ll visit our dream destination! Next up is sending out the invitations to our guests. Me and Vicky

As I wrote earlier Fredrik was very secret about my birthday, but on Thursday evening he finally told me. When we met in the evening at home after work he gave me flowers and I thought that it was a bit unnecessary as it was still 2 days left to my birthday, but still I was very surprised and glad. When I removed all the paper surrounding the flowers I found a card, saying that I was going to meet and bath with the dolphins at Kolmården Aquarium!!! I couldn’t believe it, I was so happy and I couldn’t stop smiling!!! I love animals, especially dolphins and I had a long period when I was determined to become a Marine Biologist. But I choose another path and became a programmer, but that’s another story that I can tell you about another day :-) Anyway, I was in extasy and I had a hard time falling asleep that night.

Early on Friday morning we got up and went to get the rental car that Fredrik had arranged and then we started our trip to Kolmården which is only about 130 km away from Stockholm. The program started at 10 a.m. and we were 6 persons that would meet the Dolphins. We started with some coffee as we watched the dolphins through several windows that faced the bottom of the dolphin pool. I got really emotional and my tears just ran, I was so excited and thankful for this very special day. After the coffee we had a 2 hour lecture about dolphins which was very interresting. There was a problem though, in the class room there also was a window facing the dolphin pool and I couldn’t stop staring when the dolphins swam by the window, playing with each other :-) After the lecture we had lunch, still by the windows looking at the beautiful animals. I could hardly eat my lunch, and then finally it was time to change to wetsuits! The whole building is built with windows facing the pool, so you can see the dolphins all the time even in the changing room and also in the sauna so it’s important not being timid as you’re watched by the dolphins :-)

The encounter with the dolphins was fantastic. We were divided into 2 groups and I was in the same group as Fredrik and a lady. Our group started with taking photos. So the first time I ever touched a dolphin I had to pose to the camera at the same time, but I quickly forgot all about it as soon as I met Vicky, a 33 year old dolphin. I couldn’t stop smiling and I kissed and cuddled with her. It was absolutely amazing. Then Fredrik and I went away to the other side of the pool where we sat beside one of the trainers. She called the dolphins, one at time, and we cuddled with them. We also learned different commandos: we conducted in the air which made the dolphin dance and sing, we applauded and so did the dolphin and we splashed with our feet and the dolphin did the same. After each command we got a fish that we threw to the dolphin. It was fantastic and the dolphins were so kind and soft. Afterwards all 6 of us put on snorkels and cyclops and then we sat down under the water so we could hear and see the dolphins while they did different tricks. At the end we were told to stand up in the pool without our cyclops and one of the dolphins swam by, splashing water on us! The time went so fast, too fast. I could have stayed there forever but it was time to say goodbye. We were rather cold by now so it was nice and hot to sit in the sauna for a while, watching the dolphins swim by. I had a lovely day! It was totally amazing, I can’t describe in words how happy I am.

Afterwards we strolled around alone in the zoo, it is closed during winter but we were allowed to walk around. Most of the animals were inside in their houses as it’s too cold, but we saw the Sibirian tigers, the penguins and the funny seals which seemed to enjoy our company pretty much. We spent the night at the Viltmarkshotellet, where we got the most lovely suite and Fredrik’s parents had also sent a bottle of Champagne. We ate a 3 course dinner in the hotel restaurant, and in the morning on my birthday we headed back to Stockholm.

On Saturday evening we went to the luxurious restaurant “Pontus in the green house” and the food was totally amazing. The waiters and the service was excellent. We started with a drink and then we ordered our main courses, I choose “Fillet of Monkfish with shellfish and lobster foam served with Jerusalem artichoke purée” and Fredrik choose “Swedish fillet of veal with ox marrow, knuckle of veal, artichoke and tomato”. Before our main course we got an appetizer, asparagus rolled in some kind of meat. The waiter kindly served me asparagus with a lovely ratatouille and lime aïoli instead, when I told that I didn’t eat meat. We both thought that the appetizer was really nice. We were also served different breads and 3 sorts of butter, and then we got our main courses. The food was absolutely amazing, delicious and excellent composed. We enjoyed every bite of our food. After the main course we ordered dessert and while we were waiting for our “Crème Brûlée” and “Cherry poached pears on pear and lemon curd with pear and vanilla doughnuts and macadamia flarn”, we were holding hands when Fredrik kindly asked me to close my eyes. So I did and after a short while he asked me to open my eyes again. And for the second day in a row I experienced a moment that I couldn’t believe was true. There, during our lovely evening, my dear Fredrik proposed to me while holding the most beautiful ring. It was really romantic and he said beautiful things. Of course I said yes, I love him very deeply. I was so happy, we both were. And the ring was perfect, a long time ago he had tried one of my rings and memorized how it fitted his own finger. After a while we were served a pre-dessert: a fennel sorbet on raspberry soda which was very interresting tasting and really nice. It was hard concentrating on the pre-dessert, our thoughts were somewere else. After the sorbet we got our real desserts which were so delicous and my pear composition was just beautiful. And I couldn’t stop smiling, everything felt great. When we were done we were very satisfied but to out surprise we got another dessert, a marble plate with 6 or 7 different mini sweets like conjac truffle, marshmallow, lemon toffee, panaforte and other ones which I don’t exactly remember. Each and every mini sweet tasted divine, it was a perfect ending on a perfect dinner and evening. We then walked home hand in hand through Gamla Stan, a truly happy and lucky newly engaged couple with stomachs full of amazing food and hearts full of love…

Pontus in the Green House

…and Fredrik is still very secret about it. Today he finally reveiled that we’re going to the luxurious gourmet restaurant Pontus in the Green House !! Faboulus! I’m so excited! At the beginning they had a special menu for ladies without prices, and I think that I’ll need one of those or else I’ll have a hard time enjoying their fantastic but oh so expensive food :-) I still don’t know what we’ll do on Friday, he asked me to take a day off from work and I’m sooo curious but he doesn’t wan’t to tell me yet… To be continued…. :-)

Hi Stockholm!

Champagne

The move to Stockholm and all the packing was terrible. We managed to exceed our space in the removal van, but luckily there was enough room for our things anyway so the only thing that happened was that we had to pay some extra money :-) After the removal company had left with all our things we cleaned the apartment and then we took the train together with our cats.

It was really exciting to step into the new apartment even though it was late and we were dead tired. When we came to the kitchen there laid a book about our neighborhood along with a post-it note saying welcome, and also asking us to look in the fridge where we found a bottle of Champagne, two Champagne glasses and a card with warm and welcoming words. I was very touched as I was rather sad being 500 km from “home”. And then I felt bad that we didn’t do anything similiar to our buyers of our apartment in Gothenburg….

During the same day one of our friends had received one set of our new keys so that we could enter the apartment, and he met us with the keys at the train station in Stockholm. Unfortunately he had forgotten the blankets and pillows that we had asked for, as our furniture shouldn’t arrive until the next morning. So we had to sleep on our inflatable bed with our clothes on and our jackets as blankets…

Anyway, I really love the kitchen, I’ve never had such an advanced oven before and I’m fascinated every time I use it. It has a lot of great functions and there’s a display saying what it does in Swedish. The oven is my new best friend :-)

New kitchen!

Finally we have bought a wonderful appartment in Stockholm! We were there last Sunday to have a look at 5 different ones, and the bidding was finally over tonight and the contract is signed. We will move in someday between February and March :-) Honestly, this appartment was our second choice but I hope that we will feel at home here as well.

So, do you like our new kitchen with granite bench tops, built-in fan oven, Oak kitchen cabinets, ceramic hob, dishwasher, microwave, large fridge and freezer (all other appartments that we looked at had really small ones) and fan? Well, it doesn’t matter because I love it :-)

The first snow fell this evening so we went to Kungsparken for a walk. It’s wonderful to walk when it snows; to hear the snow crunch under your feet and to get snow flakes in your face. When we came to the park I built a snowman which we named Rupert. I think that he’s cute :-)

Kungsholmen in Stockholm

It’s been a busy week, just like the week before. It’s happening a lot here and I feel bad for not posting so often anymore. I havn’t baked or cooked much lately, but I have a bunch of cookies and cakes to post about that I’ll try to post during the coming week.

We’re moving. Or actually we’re not moving yet. At this point we’re searching for appartments in Stockholm and we’re also establishing contact with an estate agent here in Gothenburg so that we can sell our appartment. Fredrik’s office moved to Stockholm last autumn, for about 10 months we took turns commuting on the weekends as he had a temporary appartment there. In June this year he got a special deal commuting to England every second week and working from home the rest of the time as we thought that we spent to little time with each other. In January/February next year the project is closing and there are no jobs for game designers in Gothenburg. As you all know I had to leave my job so we decided to move to Stockholm, where we both have jobs. I can easily change office within my new job at the consultant company. We both feel sad for moving, we will miss our familys even though it’s only 3 hours by train to Stockholm. The biggest problem is finding an appartment though. We went up just a few days ago as we were invited to the release party of the game that Fredrik’s been working with for the last few years, and because we wanted to see and make a bid on an appartment that we had fallen in love with. The appartment was just as wonderful as on all the photos that we had watched on the internet but we were shocked by the bidding; the prices in Stockholm are insane. “Our” appartment increased by $143 000 in just a few hours, leading to an insane high price per square metre – probably one of the highest this year. Anyway, we are still dissapointed that we lost the bidding but we’re searching for new appartments everyday.

When we were in Stockholm we stopped by at Gray’s, the American food store. We bought some Oreo cookies and I really have to say that I like my homemade Oreos much better, especially since they don’t stick as badly in your teeth :-)
